So, my mom used to make the BEST peppermint candy cane cookies. But lately, I've discovered that coconut and peppermint go really well together! So since I had some extra time on my hands before dance, I decided to make a newer improved version
- of momma's best cookies ever🎅 So these are Coconut dark cocoa peppermint protein cookies🍫 topped with a "red velvet" cashew milk frosting and some festive sprinkles😊🎁 Recipe:
For the cookies, combine 1 tbsp flour of choice( I used whole wheat), 1 tbsp any flavor (I used vanilla) @cellucor protein powder, 1 tbsp unsweetened cocoa powder, 1/2 cup+ 2 tbsp milk of choice🍼 (I used 1/2 coconut milk, half fat free), 3 tbsp pure maple syrup, 1 tsp peppermint extract, 1/2 cup unsweetened coconut shreds, 1/16 tsp salt, and a pinch of stevia❄️ Don't add the candy canes yet!
Directions:
1⃣ Mix all ingredients except candy canes in a deep bowl- the reason being that once it is microwaved it bubbles up!
2⃣ Microwave the mix for 2 minutes, stir, and then microwave for another minute OR more.
3⃣ Once it is stiff enough to scoop into balls or handle, place the mixture on a lined parchment paper baking sheet. Then add candy cane pieces or crushed candy cane dust to the top of the cookie.
4⃣ Bake at 350 for 15-20 minutes. Make sure you let it cool!😊 I hope you all enjoy these as much as I did! I absolutely adore peppermint when it comes to the holidays, so this challenge was calling to me👋 Enjoy guys!🎄❄️
